Mini Quiches That Kids Love

Yield: 12 mini quiches

Level: Easy
Ingredients:
1 pound diced vegetables of your choice (zucchini, sweet potato, mushrooms, broccoli, cherry tomatoes, etc.)
3 eggs
1 tablespoon fresh herbs (basil, thyme)
Pinch nutmeg
Pinch hot chili pepper
Salt & pepper to taste
1 container Tnuva Quark Creamy Soft Cheese 5% or 9%
1 package Tnuva Edam Cheese Slices, cut into small pieces
Instructions:
1. Preheat oven to 350⁰F.
2. In a mixer bowl, beat the eggs with the seasoning, the Quark cheese, and half of the Edam cheese.
3. Divide the vegetables into a muffin pan with 12 cups, or into individual ramekins. Top with the cheese mixture.
4. Sprinkle the rest of the Edam cheese on top of each quiche. Bake for 25 minutes or until nicely browned.
