Moroccan Carrot Salad

3 tablespoons of Olivia’s Spicy Harissa
2.2 lbs carrots, peeled
1 cup fresh cilantro
3 tablespoons lemon juice
Pinch of fine salt (or more to taste)
2 tablespoons olive oil

1. Boil the carrots until tender but not mushy (8-10 minutes)
2. Drain, then rinse the carrots under cool water, and slice into thin circles.
3. Add Spicy Harissa, cilantro, lemon juice, salt, and olive oil. Stir well.
3. Keep at room temperature for 1 hour before serving.
