Yield: 40 cookies
Prep Time: 40 minutes
Level: Easy
Ingredients:
Dough:
1 package Tnuva Maadanot Frozen Rolled Short Dough for Sweet Pastries, defrosted according to package directions
Filling:
Zees Spread of your choice
Chocolate Frosting:
3.5 ounces dark chocolate
2 tablespoons heavy cream
1 tablespoon oil
Peanut Butter Frosting:
3.5 ounces white chocolate
1 heaping tablespoon peanut butter
Berry Frosting:
3.5 ounces white chocolate
2 ounces frozen berries
Pistachio Frosting:
3.5 ounces white chocolate
1 heaping tablespoon pistachio butter
Instructions:
1. Preheat oven to 325 ⁰F. Open out the dough on a floured surface. Using a glass, cut out 2-inch circles from the dough. Drop about 1 teaspoon of Zees spread onto the center of each circle. Pinch into the shape of hamantasch and arrange on a baking tray, leaving space in between the cookies. Bake for 9-10 minutes until nicely browned. Let cool.
2. Chocolate frosting: Put the chocolate and the cream in a glass bowl. Heat in the microwave until melted. Whisk until smooth. Add oil and whisk again. Dip each corner of the hamantaschen into the frosting and place on a rack until set.
3. Peanut butter frosting: Put the chocolate and the peanut butter in a glass bowl. Heat in the microwave until melted. Whisk until smooth. If the frosting is too thick, add one or two tablespoons cream and whisk until smooth. Dip each corner of the hamantaschen into the frosting and place on a rack until set.
4. Pistachio frosting: proceed as with the peanut butter frosting.
5. Berry frosting: Put the frozen berries in a glass bowl, and cook in the microwave for 30-60 seconds, until very soft. Press through a sieve. Add the berry juice to the chocolate and melt in the microwave. Whisk until smooth. Dip each corner of the hamantaschen into the frosting and place on a rack until set.
