Perfect Passover Pizza

1 ¼ cups potato flour
1 cup matzah meal
1 teaspoon salt
½ teaspoon pepper
1 teaspoon baking soda
1 teaspoon baking powder
1 egg
2 ½ cups boiling water
2 tablespoons oil

Pizza sauce
3 slices Tnuva Edam cheese, cut into small pieces
3 slices Tnuva Muenster cheese, cut into small pieces
Toppings of your choice


1. Preheat oven to 400 ⁰F. Put the first six ingredients into a medium bowl and mix. Add the oil and mix. Add the boiling water and mix well. Beat the egg for about a minute and add last. Mix well.
2. Sprinkle some potato flour on a work surface. Using wet hands, transfer the dough to the surface.
3. Flatten the dough a little and sprinkle some more potato flour on top. Gently roll out with a rolling pin so that the dough is as flat as possible.
4. Grease a round pan and place the dough on top.
5. Spread pizza sauce on top of the dough. Sprinkle with cheese and fixings.
6. Bake for about half an hour or until done.
