Red Velvet Cheesecake


Prep Time: 90 minutes

Yield: 8” round layer cake

3 cups flour combined with ¾ teaspoon baking powder
1 tablespoon cocoa
1 ½ tablespoons apple cider vinegar
Pinch salt
8 ounces heavy cream
½ cup soft butter
4 eggs at room temperature
1 ½ cups sugar
1 teaspoon vanilla extract
A few drops red food coloring, according to the shade desired
Cheese Filling:
½ cup instant vanilla pudding
1 container Tnuva Premium Cheese Spread, Original Flavor
16 ounces heavy cream
1 cup sour cream
½ cup powdered sugar
Garnish: strawberries or other red berries of choice

1. Preheat oven to 350⁰F.
2. In a large mixer bowl, beat the butter with the sugar until creamy. Add the heavy cream and beat for 3 minutes. Add the eggs, one at a time, beating after each addition. Add the vanilla, salt, vinegar and food coloring and mix well.
3. Combine the flour and the cocoa and fold into the batter. Do not overmix.
4. If necessary, add more food coloring to reach the desired shade of red.
5. Divide the batter equally into 3 (8-inch) round pans. Bake for about 30 minutes. Let cool completely.
6. Beat the heavy cream with the powdered sugar and the instant pudding. Fold in the sour cream and Premium Cheese Spread and mix well.
7. Transfer the cream into a piping bag with a round tip.
