Salmon Potato Salad with Cheese Dressing

Ingredients:

1 pound salmon fillet
Salt & pepper to taste
1 tablespoon olive oil
5 potatoes, cooked
3 tablespoons chopped parsley
2 tablespoons chopped green onion

Dressing:
1 teaspoon poppy seeds
½ container Tnuva Quark Creamy Soft Cheese 5%
2 cloves garlic, crushed
2 tablespoons lemon juice
1 teaspoon mustard or horseradish
Zest from ½ lemon
Salt and white pepper to taste

Instructions:

1. To prepare the dressing: roast the poppy seeds in a nonstick pan stirring constantly until fragrant. Transfer to a glass container together with the rest of the dressing ingredients and shake well.
2. Sprinkle the salmon with salt and pepper. Heat the olive oil in a non-stick frying pan and fry for about 2-3 minutes on each sides, or until it reaches desired doneness.
3. Cut the potatoes into bite-sized chunks and transfer to a serving dish. Cut the salmon into bite-size chunks and arrange over the potatoes together with the parsley and the green onion. Pour the dressing on top. Serve cold or at room temperature.
