Smashed Potatoes with Cheese and Fresh Herbs

Ingredients:

1 bag small potatoes
2 sprigs thyme
2 sprigs oregano
Coarse salt & pepper to taste
5-6 tablespoons olive oil
5 tablespoons Tnuva Swiss Cheese Slices, cut into small pieces

Instructions:

1. Cook the potatoes in a large pot until almost ready. Drain.
2. Preheat oven to 450⁰F. Place the potatoes on a baking tray with a few inches between each potato.
3. Using a glass, smash each potato until it’s shaped like a patty. Sprinkle the herbs, the salt and pepper, and the olive oil all around.
4. Bake for 30 minutes or until brown.
5. Remove from oven. Sprinkle the Swiss cheese on top of the potatoes and return to the oven for another 5 minutes or until the cheese is melted.
