Spinach Cheese Pie

2 tablespoons olive oil
1 Spanish onion, chopped
1 teaspoon salt
14 ounces frozen spinach
3 eggs
1 ¼ cups cottage cheese
5 ounces Tnuva Muenster Cheese Slices, cut into tiny pieces
3 ounces Tnuva Feta cheese, crumbled
2 cloves garlic, crushed
½ cup matzoh meal
½ teaspoon baking powder
1 Spanish onion, cut into rings for garnish


1. Heat the oil in a frying pan and saute the onion for about 20 minutes, stirring occasionally, until soft and caramel colored.
2. Add the salt and cook for another 2 minutes.
3. Heat the oven to 350 ⁰F, and grease a 10” pie pan.
4. Drain the spinach well. Combine with the fried onion, eggs, cheeses, garlic, matzoh meal and baking powder.
5. Transfer to the pie pan and bake for 25-35 minutes, until nice and brown.
