Ingredients:
1 small butternut or acorn squash
1/3 cup honey
1/3 cup olive oil
1 tablespoon Balsamic vinegar
5 slices Tnuva Edam cheese, cut into small pieces
1 heaping teaspoon kosher salt
Pinch rosemary
Instructions:
1. Preheat oven to 450⁰F. Line a baking pan with parchment paper.
2. Slice the squash into thick slies.
3. In a large bowl, combine the honey, oil and vinegar. Add the squash slices and mix well.
4. Arrange the squash on the baking sheet and sprinkle the rest of the marinade on top. Bake for 15 minutes.
5. Remove the pan from the oven and sprinkle the cheese pieces on top. Return to the oven and bake for another 7-10 minutes or until the squash is soft and the cheese is brown.
