Sweet Potato-Cheese Rollups

1 medium sweet potato
1 container Tnuva Quark Creamy Soft Cheese 5%
3 slices Tnuva Muenster Cheese, cut into small pieces
1 teaspoon salt
Pinch sugar

4 matzos
1 cup milk
Butter or oil for frying


1. Preheat oven to 350⁰F. Wrap the sweet potato aluminum foil and bake for a half-hour or until soft.
2. Heat the milk in the microwave for a few seconds until warm. Soak the matzos in the warm milk for about a minute.
3. Transfer the matzos to drain on a cloth towel or paper towel for at least 15 minutes.
4. Peel the sweet potato and mash. Put in a bowl together with the chesses and seasoning and mix well.
5. Divide each matzo in half. Place a tablespoon of filling onto each matzo and roll up.
6. Heat butter or oil in a skillet and fry each rolled up matzo for 3 minutes on each side.
