Sweet Potato Feta Boats

Yield: 4-6 servings

Prep Time: 60 minutes

4-6 sweet potatoes (the long, skinny kind)
8-12 cloves garlic, crushed
1 teaspoon salt
2-3 tablespoons olive oil
Handful of fresh rosemary, chopped
1 container Tnuva Feta Cheese, crumbled

1. Preheat oven to 400°F.
2. Wash sweet potatoes and carefully slice in half longways.
3. Line a cookie sheet with parchment paper. Place the sweet potatoes on the cookie sheet, skin facing down.
4. Drizzle olive oil over the sweet potatoes. Sprinkle the garlic, rosemary and salt all over the sweet potatoes.
5. Cook the sweet potatoes for about 40-60 minutes or until soft. Remove from oven.
6. Sprinkle Tnuva Feta Cheese all over the sweet potatoes. If desired, add more chopped rosemary.
