Sweet & Savory Cheese Bourekas

Prep Time: 60 minutes

Ingredients:
1 cup Tnuva Feta Cheese, crumbled
1 cup cottage cheese
1 cup sour cream
1 cup Tnuva Premium Cheese Spread, Original Flavor
1 cup Tnuva Edam Cheese Slices, cut into small pieces
2 large eggs
Extra Tnuva Edam Cheese Slices to add on top before rolling
Filo dough, thawed
Olive oil, avocado oil or melted butter
Simple Syrup:
1 cup sugar
1 cup water
Alternate topping:
For a savory version, you may skip the simple syrup and top with brushed egg wash and sesame seeds.

Instructions:
1. Preheat oven to 350°F.
2. Combine cheeses, sour cream and eggs; mix thoroughly.
3. Unroll the thawed filo dough and cover with a clean kitchen towel to prevent it from drying out.
4. Take one sheet of filo dough, gently spray with oil or melted butter, and smooth it out.
5. Fold the dough in an accordion-like manner, then place a spoonful of cheese filling in the center.
6. Add an extra slice of Tnuva Edam Cheese and fold the flaps over the filling, rolling the dough to create a decorative design.
7. Repeat the process for the remaining dough and place the rolls in a lightly greased baking dish. Spray the top with oil or melted butter.
8. Bake the bourekas for about 45 minutes or until golden.
9. While baking, prepare the simple syrup: Put the sugar and water in a saucepan and bring to a boil. Simmer for 10 minutes until slightly thickened.
10. When bourekas are ready, remove from oven and brush with warm syrup. Serve while still warm and enjoy
