Swiss-Style Cheese-Vegetable Casserole

Ingredients:

3 potatoes
1 red pepper, diced
1 bag frozen cauliflower, thawed
3 tablespoons olive oil, divided
4 eggs, beaten
½ cup milk
½ cup heavy cream
Salt and white pepper to taste
1 container Tnuva Quark Cream Soft Cheese 9%
½ roll Tnuva Goat Cheese, cut into pieces
4 slices Tnuva Edam Cheese, cut into pieces
2 slices Tnuva Swiss Cheese, cut into pieces
1 tablespoon butter
Bread crumbs

Instructions:

1. Cook the potatoes in boiling, salted water until soft. Drain and set aside.
2. Saute the red pepper in 2 tablespoons olive oil until soft. Set aside.
3. Preheat oven to 350 ⁰F.
4. Dice the cooked potatoes and put in a large bowl with the sautéed red pepper. Chop cauliflower and add to the other vegetables. Add eggs, milk, heavy cream, salt, white pepper, the cheeses and the remaining tablespoon of olive oil. Mix well.
5. Grease an ovenproof dish with butter and sprinkle with bread crumbs.
6. Pour the batter into the dish and bake covered for 30 minutes. Remove cover and bake for another 15 minutes until brown on top.
