Three Cheese Panini

Panini is one of the best inventions on the planet. A hot melted sandwich for lunch? Yes please. It’s a chance to pack pita with cheese but also with the vegg and herbs of your choice. The combinations are often delicious and inventive. It’s a whole meal in one and this fun recipe has not one but two Tnuva cheeses!
Preparation Time: 17 minutes
Serves: 4
Ingredients:
4 tablespoons hummus
4 tablespoons Moroccan matbucha
4 slices Havarti cheese
4 slices Tnuva Swiss Cheese
8 slices red onion
8 slices on-the-vine tomatoes
8 whole basil leaves
4 slices Tnuva Mozzarella Cheese
8 (7-inch) pitas without pockets
Cooking spray
Instructions:
1. Preheat oven to 250°F.
2. Lay out 4 pitas on a work surface. Spread 1 tablespoon hummus and 1 tablespoon matbucha on each pita. Top with 1 slice havarti, 1 slice Swiss, 2 slices onion, 2 slices tomato, and 2 basil leaves. Place 1 slice mozzarella on top. Cover with a second pita.
3. Spray 2 grill pans with cooking spray and place over medium heat. When pans are hot, place panini in the pans and weigh each down with a heavy pot lid or cast iron pan. Grill for 3 minutes on each side. Transfer to a baking sheet and place in the oven to keep warm. Repeat with remaining 2 panini.
