Tortilla Brunch Bowl

2 large flour tortillas
8 slices Tnuva Edam Cheese, cut into small pieces
4 slices Tnuva Muenster Cheese, cut into small pieces
½ cup fresh spinach, chopped
4 eggs
1 basket cherry tomatoes, sliced
Sea salt & freshly ground pepper to taste


1. Preheat oven to 400⁰F. Place each tortilla in a medium-sized oven-proof bowl and press down so that it keeps its shape.
2. Sprinkle the cheese pieces on the bottom of each tortilla, reserving a little bit for the end. Cover with the spinach. Open the eggs into a glass and pour them on top of the spinach, being careful not to break the yolks. Scatter the tomatoes all around and season with salt and pepper. Sprinkle the remaining cheese on top.
3. Bake for about 15 minutes, or according to desired doneness of the egg yolks.
4. Remove from oven and let cool for a few minutes. Carefully remove the tortillas from the bowls and serve.
