Vegan Sweet Potato Muffins

Ingredients:

¼ cup whole wheat flour
¾ cup spelt flour
1 heaping tablespoon chickpea flour
3 tablespoons rolled oats
2 small sweet potatoes, grated
2 scallions, sliced
1 tablespoon fresh parsley, chopped
¼ cup extra virgin olive oil
2 teaspoons baking powder
½ – ¾ cup Tnuva Alternative Almond Drink
Salt and pepper to taste
½ teaspoon thyme
Crushed cashews for sprinkling on top

Instructions:

1. Preheat oven to 375⁰F.
2. In a mixer bowl, combine all ingredients. (Start with just ½ cup Almond Drink, and add more if the mixture is too dry.)
3. Grease a 12-cup muffin pan and divide the batter evenly.
4. Sprinkle cashew nuts on top and spray with some non-stick spray.
5. Bake for 20 minutes, or until a tester comes out clean.
