Zucchini-Cheese Muffins

Yield: 30 muffins

Level: Easy

Ingredients:

5 pounds zucchini, finely grated
1 container Tnuva Quark Soft Cheese 3%, 5% or 9%
3 eggs
1 onion, chopped
1 1/4 cup flour
1/4 teaspoon baking powder
1/3 cup melted Tnuva Butter
1/2 cup bread crumbs
Salt and pepper to taste
Dash nutmeg

Instructions:

1. Grease muffin tins with the melted butter and coat with bread crumbs.
2. Squeeze out the grated zucchini. Discard the liquid and put the zucchini in a medium bowl.
3. Add the cheese, eggs, onion and spices and mix well.
4. Add the flour and baking powder, making sure they are well incorporated.
5. Pour into the prepared muffin tins and bake at 350 ºF for about 35 minutes or until brown.
